Considered one of the world’s greatest theatrical festivals, not to mention the longest running in France, the Festival d’Avignon marks its 64th anniversary this summer! Charming provençal Hôtel Crillon le Brave has appointed John Ellis as Head Chef. Born in Ireland, John’s career has taken him to various regions of France and also to America. In 2002, he decided to come back to France with his wife – a native of nearby Bédoin – to continue his career in French cuisine. He and his wife and two children live in a nearby hamlet at the foot of Mont Ventoux.
Until recently, John was the Chef and Proprietor of a small restaurant in Sainte-Colombe, a lovely village on the road to the summit of Ventoux. He will be joining an impressive culinary staff at Crillon le Brave as the hotel’s Director is Christian Delteil, a Michelin-starred chef.
Some of the mouthwatering dishes on the spring menu include duck liver foie gras with dried apricot jam and walnut bread, local Monteux asparagus with herbs and sabayon, and Crillon le Brave’s famous gigot d’agneau cooked in the restaurant’s large fireplace and served with a provençal ratatouille.

Christian Delteil has been named Director at Hotel Crillon le Brave, one of France’s most notable boutique hotels. A former chef, Christian will also serve as the leader of the hotel’s restaurant team.

The Southern France native brings over 35 years of experience and a profound knowledge of the hospitality industry and French cuisine. Christian established his career with a stint at La Gavroche, a well-known London restaurant, followed by an Executive Chef position at Chewton Glen, where he won his first Michelin star. Over the years, he rose up the ranks and opened his first restaurant, which earned him a second Michelin Star. In the 90’s he became Managing Director of Bank Group Restaurants and most recently worked as a consultant collaborating with a number of restaurants and hotels throughout Europe.
